Family Trip
Hello there! Just a little update on what I've been up to the last week or so. Me and my family went to Maine/Boston on Monday and I just stepped in my house tonight. It was a really fun trip, lots of shopping and we went to a Red Sox game! Anyway, I'll be back soon with a food post. XO

Hello Dollies
Lastnight, I felt like baking. I wasn't sure what I was going to make but then I remembered that I had Eagle Brand milk in the cupboard and how yummy Hello Dollies were. So, my choice was made. I did have to run to the store to grab coconut since I used the little bag I had on my aero bar squares last week, but that allowed me to get snacks so I wasn't too put off.
Preheat oven to 350 degrees (325 if using a glass pan).
These squares have always been a family favourite. My Granny makes them all the time and they never last a day. It could be because of my five uncles and aunt that have a ginormous appetite or possibly that there is always company at their house (including myself), either way, they're eaten. Fast.

I took the recipe right off the Eagle Brand website, but I switched out the pecans for walnut pieces, because that's what was in my cupboard. They turned out great. When my Dad got home lastnight, they were just coming out of the oven (piping hot, might I add) but he insisted that I cut them. After much bugging, I did. I had one and they are so good when hot. Needless to say, when I got up this morning, there were large chunks missing from the pan.

Life update: summer is going by WAY too fast. Last weekend was the race through time. Two of my uncles, Donald and Albert, and my Aunt Luciann ran the race. Congrats on a job well done! Also, it was so nice I got to sit pool/beach side all weekend long. Loves it. Get excited, I'm done work very soon (this week or next, not sure yet)!!
Hello Dollies
2 cups graham crumbs
3/4 cup butter, melted
1 can Eagle Brand milk
1 & 1/3 cups coconut
1 & 1/3 cups chocolate chips
1 & 1/3 cups walnut pieces
Preheat oven to 350 degrees (325 if using a glass pan).
Combine graham crumbs and melted butter, press into 9x13' pan.
Pour Eagle Brand milk over graham crumb layer and spread evenly. Sprinkle coconut, chocolate chips and walnut pieces on top and press firmly.
Bake for 25-30 minutes or until top of squares is slightly browned.

Aero Bar Squares
Happy hump day! It's Wednesday and so far so good. For a working day, it hasn't been half bad. I spent the morning on an un-chaperoned field trip for work and then had lunch with dessert, aero bar squares. I made these lastnight, and they're as good as I always remember they are. After last week's disappointment, I wanted to bake something I knew I would be satisfied with and this square fit the bill.

Life update: my uncle and his girlfriend are home from Alberta with their two girls, my cousins, since a couple of weeks ago. It has been great seeing them, but they go back friday. Boo. Anyway, because they were home, we chose last Friday to have a 40th Anniversary party for my grandparents. It was such a success! Lots of food, dancing, family & friends (and drinks). This weekend, my mom's side of the family is coming to my other grandparents. Psyched! I will update you on the happenings as they come.
Almost forgot! Congratulations to my cousin, Brett Hanham, for getting accepted into Mt. St. Vincent!!
Back to baking... here's a couple shots of the squares. Don't mind the messy cutting. I had to do it quickly before work this morning.
Aero Bar Squares
1/4 cup butter
1 can Eagle Brand milk
4 Aero Bars
2 tsps. vegetable oil

Preheat oven to 350 degrees.
Combine graham crumbs and coconut. Add melted butter and combine until crumbly. Add Eagle Brand milk and combine until mixed well. Press into 8 inch square pan and bake for about 10 minutes.
For topping, melt 4 aero bars with oil using microwave. Pour over cooled bottom layer and spread evenly. Allow to set in fridge for at least three hours.

Chocolate Oatmeal Almost Candy Bars
I'm back! I finally buckled down and bought my own digital camera! It's nothing fancy or anything but it does the trick. It is also convenient because it is dust/shock/water/freeze proof. And let me tell you, I'm the type of person that needs that kind of thing. Every camera I have had, I've managed to break in little time. So, here's to hoping this one rides out!
Anyway, back to the reason I'm posting... baking. I made Chocolate Oatmeal Almost Candy Bars. That's what they're called anyway. I got this recipe from Annie's Eats a while ago and finally made them.
To say the least, I was totally disappointed. These are probably my least favourite goodie I have baked thus far. They need something else, a caramel layer or something along those lines. And I also feel like the oatmeal crust on bottom is much too thick (so if you're going to make them I advise against using it all).
They weren't downright bad or anything, but I can't see myself making these again. Oh well, you live and learn. Or in my case, bake and learn. I'm not going to post the recipe as I believe it does not deserve posting. You can find it on the blog I found it on if you so wish. I do have a couple photos of them, so here it goes.
On another note, just wanted to say, so sorry for my lack of posting the month of July. Along with camera problems, almost everyday was a scorcher so I didn't feel like roasting just for the sake of some baking. I didn't give up though!
